Goro + Gun introduces the Yuzu Wit

Pair a craft beer with handcrafted ramen and what do you get? The delicious Yuzu Wit beer at Goro + Gun. Executive Chef Tomo Mitsuno partnered with Big Rock Brewery to come up with a specialty brew based around this uncommon fruit. Yuzu is an Asian fruit that is a hybrid of mandarin and papeda citruses. Using the yuzu zest with orange peel, Big Rock and Chef Tomo worked at the brewery’s nano brewing room to play around with the flavours to get the right combination of complexity and layers. Only 250 litres is made in these brewing sessions to create a small batch just for the restaurant.

The result is the Yuzu Wit, a light-bodied, fresh-tasting beer that goes down nice and crisp. During the latter stages of the brewing process, a “tea bag” of yuzu is mixed with fresh ginger to really bring out the citrus oils and flavours. If you like fruity beers, then you will absolutely enjoy the Yuzu Wit.

The craft beer is available only at Goro + Gun so if that wasn’t incentive enough to stop by then the Mazemen Ramen pairing will catch your tastebuds too. Chef Tomo created this dish to pair specifically with the Yuzu Wit. It’s a seasonal take on the traditional ramen that has the noodles coated in a thin sauce rather than in a broth soup. It’s spicy and flavourful to complement the smooth mandarin beer tang. The bowl is topped off with onsen tamago (BBQ pork), bamboo, ginger, yuzu kosyo, and chili oil.
