Broccoli cheddar quinoa bites


I’m writing this blog as I’m watching the season premiere of Masterchef Canada on my PVR. The show reminds me of the great home cooking I have been doing lately (if not exactly Masterchef worthy lol) and I’m excited to share with y’all. One of my life resolutions this year is to try out new foods and recipes. I’ve been finding my cooking inspiration on social media by watching tons of those quick cooking videos that show a recipe in a minute or less. What I really like about these videos over regular printed recipes is that you can see the entire process quickly and get inspired by both the process and the end product. In 10 minutes, I can see 10 different options and will find at least one meal I’d like to try.

I haven’t written about cooking recipes in the past mainly because I’m a very impromptu kind of cook. I substitute ingredients regularly and I won’t necessarily measure anything. I prefer to use recipes more as a guideline, rather than the rule. I prefer to improvise mainly because I like to be able to use what’s already in my pantry rather than buying new items for a specific dish. With that in mind, I’ll still share the original recipes, what I may have modified, and any lessons and tips I learned.

So one of the first video recipes that sparked my interest? These delicious Broccoli Cheddar Quinoa Bites.

One of the main changes I made was to use far less cheese than the video listed. I am trying to eat better so I didn’t want to negate the healthiness of the rest of the recipe. My friends all gave me rave reviews for these broccoli bites and commented that they still had plenty of cheesy flavor.

The next time I make these bites, I’m going to switch it up and use cauliflower as I usually have that on hand in the freezer.

The one thing to keep in mind with these “fast-forwarded” video clips is to be realistic about the time needed to actually cook everything (boiling quinoa, chopping vegetables etc).

All in all, these Broccoli Cheddar Quinoa Bites were quick and easy to make, and just as easy to eat all up. Yum yum!
